One way to assess the function of smelling in humans is to examine the consequences of its loss. Humans rely primarily on vision and audition, so the sense of smell assumes far less importance relative to many other animals. Thus, although blindness and deafness are serious disabilities, no sense of smell                                            . These include vocational problems where the sense of smell is required professionally, weight loss through decreased appetite, safety issues concerning the identification of smoke, natural gas, and other unpleasant odors, and problems with personal and food hygiene. Despite these practical effects, the aesthetic loss of no longer being able to enjoy eating and drinking, where smelling is the primary sense, and the inability to experience pleasant natural odors are reflected by lower quality-of-life scores reported in individuals who can’t smell. Pasteurization is a process that eliminates disease-causing microorganisms, such as salmonella, in food products. The most common means of pasteurizing food is to apply heat for a specific period of time. The higher the heat, the less time is needed to ensure food safety. With most food products, high pasteurization temperatures are desired because the shorter heating time inflicts less quality damage to the food. Eggs, however, cannot be pasteurized at high temperatures or the egg proteins coagulate. A typical commercial pasteurization process for liquid whole eggs is to heat the eggs for 3.5 minutes at 140(60). Other pasteurization processes exist. For example, dried egg whites can be pasteurized by holding them at 130(54) for seven days. For the most part, pasteurization does not affect the properties of the eggs. [인터넷수능 p.89 2]

From time immemorial, the tribe or the community or the nation or the culture has agreed upon what constitutes the real world. To be sure, different tribes or different cultures might have held sharp different world views, but there was a large, relatively unified group which felt assured in its knowledge of the world. So the group frowned upon, condemned, and even killed those who did not agree, who perceived reality differently. Copernicus, even though he kept his findings secret for many years, was eventually declared a heretic. Galileo established proof of Copernicus’s views, but in his seventies he was forced to take back his teachings. Giordano Bruno was burned at the stake in 1600 for teaching that there were many worlds in our universe. [인터넷수능 p.90 3]

Why didn’t evolution provide us with a clock to measure minutes and hours? As with all questions about the why of nature, this one allows only for speculation. Probably in the past there was simply no need to establish a chronometer for intervals of this order. A creature has to adapt to the rhythms of day and night to be able to hunt for food when its natural enemies are sleeping. It can be a matter of life or death whether an animal leaves its shelter at daybreak or at noon, but it is of no consequence whether it gathers the first nuts at exactly 4:17 a.m. or fifteen minutes later. Minutes and hours have no meaning in the wilderness. Traditional tribal cultures also get along without them. The languages of some traditional cultures even lack vocabulary for such brief periods of time. Only highly developed societies have distinguished these segments of time, a process British natural philosopher Gerald Whitrow has called “the invention of time.” [인터넷수능 p.92 5]
